Over 800 years old, Palhete Wine is produced in line with the teachings of the Monks of the Cistercian Order. This historic wine has very few producers.

To produce this wine, 80 percent white grapes and 20 percent red grapes are required. The white grapes are placed in warehouses after being crushed and only the must. The red grapes are placed separately and remain for five to eight days in vats, where they are tanned, so that the liquid absorbs the dark color of the skin. After this process, the two qualities are mixed and left to ferment. After fermentation, the wine is passed clean.
